Pumpkin Pudding Pie with Coriander Sauce
The appearance of this cake-like pie is reminiscent of Indian pudding, but the flavor is deliciously spiced pumpkin. The spice, coriander, is the dried fruit or seed of a plant belonging to the parsley family and has a slight lemon flavor. Nutmeg can be substituted for coriander using the amount in the tip below.
15-oz pkg. Pillsbury All Ready pie crusts
1 tsp. flour
Filling
¾ cup firmly packed brown sugar. (1 1/8 cup)
½ cup butter or margarine, softened (3/4 cup)
1 cup cooked, mashed pumpkin (1 ½ cup)
2 eggs (3 eggs)
1 ½ cups Hungry Jack Buttermilk Pancake and Waffle mix * (2 ¼ cups)
1 tsp. ground coriander ** (1 ½ tsp.)
½ tsp. cinnamon ( 3/4 tsp.)
1/8 tsp. cloves (3/16 tsp.)
Sauce
1 cup sugar ( 1 ½ cup)
½ cup butter or margarine ( ¾ cup)
½ cup whipping cream ( ¾ cup)
½ tsp.ground coriander ** ( ¾ tsp.)
½ tsp. vanilla ( ¾ tsp.)
Prepare pie crust according to package directions for filled one-crust pie using 9-inch pie pan. Alternate measurements in ( ) are for a 10-inch pie pan. Heat over to 375º.
In large bowl, beat brown sugar and ½ cup butter until light and fluffy. Add pumpkin and eggs; blend well. Stir in pancake mix, 1 tsp. coriander, cinnamon and cloves. Spoon mixture into pie-crust lined pan. Bake at 375º for 35 to 45 minutes or until top springs back when lightly when lightly touched in center.
In small saucepan, combine all sauce ingredients except vanilla. Bring to a boil; simmer over low heat for 2 minutes, stirring constantly. Remove from heat; stir in vanilla. Serve sauce over warm or room temperature wedges of pie. Pass additional sauce. Store in refrigerator. 8 to 10 servings.
MICROWAVE DIRECTIONS: To prepare sauce, place ½ cup butter in 4-cup microwave-safe measuring cup. Microwave on HIGH for 1 ½ minutes or until melted. Add whipping cream, sugar and ½ tsp. coriander, mix well. Microwave on HIGH for 1 ½ to 2 minutes or until mixture boils, stirring once halfway through cooking. Boil 1 minute. Stir in vanilla.
TIPS: * Be careful not to overmeasure pancake mix.
** One-quarter teaspoon can be substituted for coriander in both the filling and sauce.
HIGH ALTITUDE: Above 3500 feet: In filling, add 1/3 cup flour and increase eggs to 3.
