Mom's Garlic Pickles
4 qt. cucumbers, sliced
6 med white onions, sliced into rings (6 cups)
2 sweet green peppers, sliced into rings (1 2/3 cups)
3 cloves garlic
4 carrots, sliced
1/3 cup pickling salt
5 cup sugar
3 cup cider vinegar (white)
2 tbsp mustard seed
1 1/2 tsp turmeric
1 1/2 tsp celery seed
1/2 tbsp alum
cracked ice (Mom usually used a bag)
Combine cucumbers, onions, green pepper, carrots, garlic and salt. Cover with cracked ice, mix well.
Let mixture stand at least 3 hours or overnight.
Drain well and remove garlic.
Combine remaining ingredients and bring to a boil and stir until sugar is disolved.
Add drained vegetables and bring back to a boil.
Simmer uncovered for 5 minutes.
Pack into hot pint jars leaving 1/2 inch headspace.
Seal immediately and process for 5 minutes in boiling water bath.
