Shuck beans (dried green beans)

Pick fresh green beans and either sew them onto strings or lay them flat in the sun for several days to dry. After drying, place in ziplock bags in the freezer. These will keep indefinitely and are delicious.

To cook:
Soak beans in water overnight to rehydrate. Cook until soft with a bit of salt pork and salt and pepper until soft but not at all mushy, usually a couple of hours.
