Corn Casserole

Corn Casserole

1 can of whole corn (drained)
1 can of creamed corn
1/2 cup of chopped onions
1 cup of milk
2 eggs
1 cup of cornmeal
1 cup of cheese (I prefer the sharp)
2 TBSP sugar
1/4 cup of oil
salt and pepper (I just add about a quarter size of salt and a couple shakes of pepper)
You can also add
1 small jar of pimentos (I love em!)
1 chopped pepper (if use it I use jalapeno, two if they are really small)
Mix it all together in a geased casserole dish and bake in a 350 degree oven for about 45 minutes to an hour...If it starts to get too brown on top cover with foil. It should be runny when it is done, but almost like a thick custard.

Corn Casserole

1 can cream style corn
1 can whole corn(drained)
1 box Jiffy corn muffin mix
2 eggs
1 cup sour cream
1 stick of margarine

Mix all ingredients together.
Pour into casserole dish.
Bake 350 degrees for 45 minutes to 1 hour.



Note - To reduce the fat content, substitute the following:
Egg substitute equal to 2 eggs
1 cup Fat Free Sour Cream
